Small taproom focused on wood fermented beers
Located in Downtown Canton, OH
The Woodshop is a project by UnHitched Brewing Company focused on the fermentation of beers in wooden vessels. Fermentation will take place in foeders (basically giant oak barrels) and other smaller oak barrels. Our primary emphasis will be crafting distinctive lagers, saisons, and sour beers.
The brewing process begins at our main facility in Louisville. Following the initial stages in brewing process, the wort undergoes cooling and is transported to the Woodshop where it is transferred into the wooden fermentation vessels. Yeast is introduced, and the real magic takes place.

Three friends. Three business. All under one roof. The Woodshop will be located inside the Deli Ohio building one block from Centennial Plaza in Downtown Canton. Also joining in the “collective“ is Mike’s Pizza.
Deli by day, Pizzeria by night, Woodshop beers all day long
As part of your experience at the Woodshop, you will be able to grab a beer and a sandwich during the day.
And at night, Mike’s Pizza will be dishing out some delicious NY style pies and other pizza shop comforts.
